Soft. dense. foamy mousse. with a long-lasting delicate cordon around the glass. and a long-lingering bead of fine. pin-point bubbles. straw yellow. with greenish highlights
AROMA:
Crisp. rich. and elegant. fairly lengthy and with lovely depth. It releases generous fragrances of apple. pear and citrus
PALATE:
Displays an exceptional freshness and zesty acidity. with a velvety texture and fine balance. concluding with appealing notes of citrus
FOOD PAIRING:
The perfect aperitif. it will also pair well with most dishes. in particular the traditional recipes of the Franciacorta area. such as casoncelli (ravioli) and fresh-water fish (perch and char). It brings out the best qualities of dishes featuring rice. pasta. light meats. salt-water fish. fresh and medium-aged cheeses.

Maturation: assemblage of the cuvée in the spring following harvest. Bottled with a liqueur de tirage of 24 g/l sugar and cultured yeasts. Maturation sur lie for a minimum of 24 months. followed by an additional 2 months following disgorgement.
